Canine Food Allergy: Pathogenesis and Offending Allergens

The pathogenesis of food allergy is very complex and not completely understood. However, a complicated, multifactorial, systemic, and gastrointestinal immune system dysregulation is present in dogs with food allergy.

Food allergy is characterized by an abnormal immune response—typically, an overreaction—associated with a reduced tolerance to particular substances (i.e., allergens) that are innocuous to most individuals. While a variety of clinical signs can be observed in dogs with food allergy, dermatological signs are the most commonly reported and are indistinguishable from those of atopic dermatitis.

In this session, Dr. Domenico Santoro reviews what is currently known about the development of food allergy in dogs, including risk factors, common allergens, and cross-reactivity among food allergens.
